We spent out Sunday together, as a family, and boy was it amazing. Fun at the park, pulling weeds, (never ending task) water table splashing and Aaron and I even found time to enjoy time together. I ran with Bella while he caught up on T25 that he missed, and then we both did one together (since I missed the second video on Friday.) It may not have been the way others view spending time together, but for us, it is exactly what we love to do together.
We have a few more road trips planned but time is winding down for both of us as the academic year is fast approaching. While I love when the students come back, I am sad that I will go back to my 8-5 schedule. When I work until 4 I always think, "wow, it's 4 already"? And when I work until 5 I always think, "wow, it's only 4"? Yup, I need a job where I can work till 4 all year round.
Clean Eating Chocolate Chip Cookies
Ingredients:
- 2/3 cup almonds
- 1/3 cup cooked oatmeal
- 3 tablespoons honey
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/8 cup whole wheat pastry flour
- 1/2 cup grain sweetened chocolate chips
Directions:
- Preheat oven to 325 degrees F.
- Mix everything except the chocolate chips in a food processor. You should have a nice wet, sticky dough when you’re done.
- Using your spatula, scrape dough into your mixing bowl and mix in chocolate chips.
- Spoon onto a parchment lined cookie sheet.
- Bake for 20 minutes.
I dare you to not eat the entire pan. Double dare.
