Vegan Peach Cobbler

An amazing weekend visit with the in-laws yielded lots of great food, fun with Bman, pancake Sunday pumpkin style, and fresh fruit from a fruit stand in South Carolina.

 Brody and Nana. Bman is totally my kid, he devoured 4 pumpkin pancakes!

Aaron and I have been so good lately with our diet and I don't want to deviate too far from that, but with all the fresh fruit we had I decided dessert was in the cards for our Sunday evening family dinner.  In true Courtney fashion, I did not measure anything when I made this dessert.  Dash of this, handful of that is how it went. 

Vegan Peach Cobbler a la Courtney Bell

 4 cups sliced peaches.  
 Bring (approx) 1/2 cup agave, 1 short pour vanilla extract, a few shakes of cinnamon, one shake nutmeg, 1/3 cup water.  Bring to a boil.
 Mix in peaches until they are covered with sauce.  Return to boil then simmer on low 3-4 minutes.
 In a food processor combine (approx.), 1 cup almonds, 1/4 cup coconut flour, small handful of brown sugar, shake or two of cinnamon, pinch of nutmeg, 1/2 cup almond milk.  Mix until all ingredients are combined and almonds are finely chopped.  This will be a wet mixture and look like oatmeal.
 Layer peaches in baking dish and cover with almond mixture.  Bake at 400 for 20 minutes.
Serve immediately and enjoy!
